Ingredients
- 1 Tablespoon vegetable oil
- 1/2 cup onion, diced
- 1 large carrot, diced
- 1 celery rib, diced
- 1/2 teaspoon garlic, minced
- 2 cans (14.5 ounce) chicken broth
- 1/3 cup uncooked rice {we like Jasmine}
- 1/2 teaspoon dried basil
- 1/4 teaspoon black pepper
- 3 Tablespoons all-purpose flour
- 1 (12 ounce) can evaporated milk
- 1 1/2 cups cooked pulled or diced chicken {rotisserie works great!}
Instructions
- In a large pot or dutch oven, add oil, onion, carrot and celery. Sautee until vegetables are soft and tender.
- Add garlic and sautee for 1 minute longer.
