Rellenong Pusit is an easy recipe.It is also known as stuffed squid.
1 kg. fresh squid, ink sac removed
100g. pork fat
2/3 cups singkamas, diced
2/3 cup carrot, chopped
1 red bell pepper, chopped
4 segments garlic cloves, crushed
1 onion, chopped
1 Tbsp. powdered milk(optional)
1/4 tsp. pepper
1 1/2 tsp. salt
2 Tbsp. oil
1 Tbsp. calamansi/lime juice
2 Tbsp. soy sauce
1 tsp. salt
1/2 tsp. pepper
8 oz. can tomato sauce
2 cups broth
1 onion chopped
4 segment garlic, crushed
1 tsp. soy sauce
1/2 tsp. salt
1 tsp. sugar
2 tsp. flour
2 Tbsp. banana ketchup
1 carrot cut into desired shape
1 stalk celery, sliced
2 Tbsp. oil
Marinade squid for at least 2 hours. chop up the head and set aside.
Brown pork fat in hot carajay. saute garlic, onions and chopped up squid heads.
Add sinkamas, carrots, bell peppers and two tablespoons of tomato sauce. Season.
Add powdered milk. Cook until almost dry.
fill each squid with 2 tablespoons of this mixture. Secure with toothpick if necessary. Set Aside
saute Garlic and onions. Add pusit, tomato sauce and meat broth.
season and simmer for 10 minutes.
add carrots, celery and banana ketchup.
thicken sauce with flour
simmer for another 10 minutes.
serve hot, enjoy
